Vietnamese Noodle Bowl

Ingredients for 4 servings

Chicken:

  • 1 lb chicken thighs
  • 2 cloves garlic
  • Juice of 1 lime
  • 2 T fish sauce
  • 1 T soy sauce
  • 1 T vegetable oil
  • 2 T brown sugar

Nuoc Cham sauce:

  • 1/3 C water (reduced from 1/2 C because this makes too much sauce)
  • 3 cloves garlic
  • Juice of 1 lime
  • 2 T rice wine vinegar
  • 1/4 C fish sauce
  • 3 T sugar
  • 1 red chili

Other:

  • 6 oz rice noodles
  • lettuce
  • 1 carrot
  • 1 cucumber
  • cilantro
  • basil

Mix all of the marinade ingredients and marinade the chicken for 30 minutes.

Soak the noodles in warm water for ~20 minutes.

Mix the Nuoc Cham.

Peel and julienne the carrots; thinly slice the cucumber and lettuce.

Sear the chicken over medium-high for ~4 minutes on each side. Boil the noodles until tender (this should only take a minute or two).

Combine everything in bowls.
