Turkey Meatloaf

Ingredients

  • 1 onion
  • 1 clove garlic
  • 1 carrot
  • olive oil
  • kosher salt
  • black pepper
  • 1/2 C panko
  • 1/4 C chicken broth
  • 1/2 T tomato paste
  • 1 t dijon mustard
  • 1 T + 1 t worcestershire sauce
  • 2 T parsley
  • 1 egg
  • 1 lb ground turkey
  • 1 heaped T ketchup
  • 1 T molasses
  • 1 T apple cider vinegar
  • 1 t hot sauce

Preparation

Finely dice or food process the onion, garlic, and carrot. Heat the oven to 350. Spray a 9"x13" pan with cooking spray.

Coat the bottom of a pan with olive oil over medium heat, then add the vegetables, season with salt and pepper, and cook until browned (7-10m). Move to a large bowl and add the panko, broth, tomato paste, mustard, 1 T worcestershire, parsley, 1 t salt, and 1/2 t black pepper, and mix. Beat in the egg, then mix in the turkey. Shape the turkey into a 4"x8" loaf in the pan.

Mix the ketchup, molasses, vinegar, hot sauce, 1 t worcestershire, and some salt and pepper to form a glaze. Spoon it over the meatloaf.

Bake for 35m or until the center measures 160.

Let rest for 5 minutes, then serve.
