Smothered Chicken Dinner

Ingredients

  • 2 lb chicken thighs
  • 3 tbsp soy sauce
  • 2 tbsp Frank's Red Hot
  • 2 tbsp vegetable oil
  • 1 large onion
  • 1 green pepper
  • 1/4 C parsley
  • 2 cloves garlic
  • 1 C white wine
  • 1/2 C chicken stock

Chop the onion, pepper, and parsley; mince the garlic.

Marinate the chicken in a bag with the soy sauce, Frank's, and oil for 20 minutes.

Saute the onion, pepper, parsley, and garlic until fragrant (5-7 minutes), then deglaze with wine and stock. Add the chicken and marinade, stir, cover, and cook over medium high for at least 1.5 hours - the chicken should fall apart when you stir it.

Serve with rice (I use buttered basmati).
