Smoky Macaroni and Cheese

Ingredients

  • 1 lb macaroni
  • 2 onions
  • 1.5 T brown sugar
  • 3 T balsamic vinegar
  • 200g smoked cheese
  • 100g cheddar
  • 4 T butter
  • 1/3 C flour
  • 1 t table salt
  • 2 1/2 C milk
  • breadcrumbs
  • pepper

Grate the cheeses.

Slice the onions. Cook over medium heat until thoroughly caramelized (about 40m, but watch them). Add the brown sugar and vinegar.

Cook the macaroni.

Melt the butter over medium heat. Whisk in the flour and salt and cook for a minute or so, then slowly whisk in the milk; it should form a solid clump at first, and eventually turn into a white sauce with more milk. Mix in the cheeses and allow to melt.

Mix everything together, sprinkle with breadcrumbs and pepper, and broil a couple of minutes until lightly browned.
