Simple Black Bean Chili

Ingredients

  • 1 poblano
  • 1 jalapeno
  • 1 onion
  • 2 garlic cloves
  • 2 T vegetable oil
  • 1/2 T kosher salt
  • 1 t chipotle chili powder
  • 2 t cumin
  • 1 t oregano
  • 14.5 oz canned crushed tomatoes (ideally fire roasted)
  • 31 oz canned black beans
  • 1/4 C cilantro
  • 1/2 oz lime juice

Preparation

Drain and rinse the beans. Chop the cilantro. Halve and seed the peppers. Cut the onion into eight pieces.

Toss the peppers, onion, and unpeeled garlic with 1T oil and broil until the vegetables have black spots, 5-10m. Peel the garlic, then blend the vegetables until chopped (but not pureed).

Heat the remaining tablespoon of oil over medium high, then add the chopped vegetables and spices, and cook for 2m. Add the tomatoes and simmer for 5m, then add the beans and simmer for 5m. Stir in the cilantro and lime juice.
