Long beans and turkey stir-fry

Ingredients:

  • 1 ¼ lb green beans, or long beans if you can find them
  • 1 head garlic (about 15 cloves)
  • 6-9 red or green chilies
  • 5 tbsp vegetable oil
  • 10 oz ground chicken or turkey
  • ½ tsp paprika
  • 1 tsp brown sugar
  • 3 tbsp fish sauce or salt to taste
  • 1 ¼ cups water

Wash the beans and cut them into ¼-½ inch pieces. Mince the garlic and finely slice the chilies. Heat the oil to medium-high, and fry the garlic and chiles until the garlic turns golden. Add the meat and cook until it looks done, stirring to break it into small pieces. Add the remaining ingredients and cook until the liquid is mostly gone.
