Lemon Chicken

Ingredients:
Chicken:
- 1 lb chicken
- 2 tsp shaoxing wine
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp sesame oil
- 1/8 tsp white pepper
- 1 tbsp cornstarch
Coating:
- 1/2 C cornstarch
- 2 T flour
- 1/4 tsp salt
- 1/8 tsp white pepper
- pinch turmeric
- 1/4 tsp sesame oil
Sauce:
- 2 lemons
- 1/3 C water
- 1/4 C sugar
- 1/4 tsp salt
- 1 1/2 T cornstarch
Chop the chicken into bite-sized pieces, then mix with the remaining ingredients and let sit for at least 20 minutes.
Mix the coating, then dredge the chicken pieces and shallow fry in batches until crispy and fully cooked.
Zest the lemons, then juice one and a half of them; slice the remaining half thinly and cut into wedges. Make a cornstarch slurry. Mix everything but the slurry, then simmer over medium-high heat while doing a second fry on the chicken. Stir in the slurry, let the sauce thicken, then fold in the chicken.
