Ingredients:

  • 1.5 lb corn
  • 4 T melted butter
  • 1 egg
  • 1 T milk
  • 1/4 C masa harina
  • 3/4 C flour
  • 2 T sugar
  • 1/3C shredded jack or cheddar
  • 3 T parmesan
  • 3 T cotija

Blend the corn, butter, egg, and milk - if using frozen corn, defrost it first! Once pureed, blend in the flours and sugar and let sit for five minutes. Fold the cheese into the batter.

Melt butter and oil over medium and cook heaping tablespoons, 3-4 minutes per side.

Serve with toppings like salsa or Mexican Beans
