Turkey Burgers

This recipe is from Cook's Illustrated.
- 1¼ pounds ground turkey
- ¼ teaspoon table salt
- ½ teaspoon black pepper
- 2 teaspoons Worcestershire sauce
- ½ cup ricotta cheese
- 2 teaspoons Dijon mustard
Mix everything together, and shape into four inch-thick patties. Cook over medium heat for four minutes on each side, then cover and cook over medium-low for a further eight to ten minutes until the patties are up to 160 degrees.
