Ingredients:
- 2 T oil
- 1 green pepper, cut into strips
- 1 red onion, sliced
- 2 tomatoes, diced
- 1 lb mushrooms, quartered
- 2 tsp berbere
- 3 cloves garlic, minced
- 1 tsp white wine
Heat the oil over medium heat; add the green pepper, onion, and tomatoes and cook until the pepper and onion have softened. Increase the heat to high and add the mushrooms, berbere, garlic, and wine; cook until the mushrooms are done. Season to taste with salt and serve with Injera.
