Chocolate Walnut Meringues

  • 1 lb powdered sugar
  • 11 oz chopped toasted walnuts
  • 2 oz cocoa powder
  • 1/2 tsp salt
  • 4 egg whites
  • 1 tbsp vanilla extract

Preheat the oven to 320 degrees.

Mix the dry ingredients thoroughly, then stir in the wet ingredients. Keep stirring until everything is moistened; you should end up with a very thick dough. Spoon ~2 tbsp lumps onto parchment-lined cookie sheets and bake for 17 minutes (this might be too long, but 15 wasn't quite enough). Cool on the parchment.

The page we got this from expects the cookies to spread significantly, but we got no spreading at all; I could easily fit 12 on a cookie sheet and ended up with much thicker cookies than expected.
