Chicken Paprikash

Ingredients:
- 2 lb chicken
- Salt and pepper
- 1 onion
- 3 T paprika
- 2 C chicken stock
- 2 tomatoes
- 1 anaheim pepper
Dice the onion; core and roughly chop the tomatoes and pepper.
Season the chicken and sear both sides in a dutch oven, then set aside on a plate. Cook the onion until soft, then add the paprika, cook for two more minutes, then add the chicken and its juices back to the pan. Add the stock, tomatoes, and pepper, bring to a boil, and simmer over medium-low for 30 minutes. Serve with sour cream and egg noodles.
