Ingredients:
- approx 16 oz extra-firm tofu
- ginger (not much, roughly half an inch)
- 1 tbsp Shaoxing wine
- 2 tbsp Chinese black vinegar
- 3 tbsp soy sauce
- 1/4 C sugar
- 1/4 C + 1 tbsp water
Cube the tofu into roughly half-inch cubes and peel and slice the ginger.
Fry the ginger in oil in a large pan over medium heat for 1 minute, then add the tofu cubes. Cook, tossing occasionally, until the tofu is browned (approx 10 minutes). Add the remaining ingredients, bring to a boil, cover, and simmer over medium-low for 15 minutes. Remove the lid and reduce to a very thick sauce over high heat.

This is a tough recipe to double because it's hard to brown all the tofu in the pan, but it's probably possible to do it in batches.
