Strawberry Panzanella

Ingredients:

  • 1 lb bread (we use most of a como loaf)
  • 2 C strawberries
  • 1/4 C + more olive oil
  • 3 C spring mix
  • 1/3 C gruyere
  • 1/4 C basalmic vinegar
  • 1 T honey
  • salt
  • pepper

Slice the strawberries; grate the gruyere; cube the bread.

Blend 1/4 olive oil, the vinegar, honey, 1/2 C strawberries, and a pinch of salt and pepper together.

Toss the bread with ~2T olive oil and more salt and pepper, then fry over low heat until golden brown, adding more oil as needed. Mix everything but the gruyere and half the dressing together and let rest for 30 minutes, then top with the gruyere and serve with the remaining dressing.

From [Poor Girl Eats Well]; we tend towards breadier panzanellas so the proportions are a bit changed.
