Ingredients
- 2 t coriander seeds
- 1 t cumin seeds
- 1 t black peppercorns
- 2 allspice berries
- 4 green cardamom pods (seeded)
- 4 cloves
- 5 dried chiles
- 3 T paprika
- 1 t salt
- 1/4 t nutmeg
- 1/2 t ginger
- 1/4 t cinnamon
- 1 t turmeric
Toast the whole spices and chiles, and allow to cool completely. Grind everything in a spice grinder.
From Daring Gourmet; their recipe also calls for 1/2 t fenugreek seeds, which I couldn't find, but this was tasty without them.
