Ingredients:
- 1 lb orzo
- 1 cucumber, seeded and chopped
- 2 cups tomato, seeded and chopped
- 8 oz feta
- ½ cup olives, chopped
- ½ red onion, thinly sliced
- ⅓ cup basil, chopped
- ⅓ cup olive oil
- juice of one large lemon (3 tbsp)
- 1 shallot, minced
- 2 tsp Dijon mustard
- 2 tsp honey
- salt and pepper
Cook the orzo. Whisk the olive oil, lemon juice, mustard, honey, and shallots together along with ~½ tsp each salt and pepper (or to taste). Toss everything together in a large bowl.
