Ingredients:
- 1 lb tomatoes
- olive oil
- kosher salt
- 6 cloves garlic
- cayenne pepper
- 1/2 tsp anchovy paste
- 1 T tomato paste
- 6 oz angel hair
- 1/4 C parsley
Cut the tomatoes into reasonable pieces for roasting - for a single 1lb tomato 16 pieces worked well. Rub with olive oil, sprinkle with salt, and roast at 250F for 2-3 hours.
Thinly slice the garlic and chop the parsley.
Once the tomatoes are done, cook the pasta. While the water comes to a boil, heat about 3T of olive oil over medium heat. Once the water boils, add the garlic, anchovy paste, and cayenne to taste. Cook for 3 minutes, add the tomato paste and tomatoes, and cook for a minute more. Add the pasta and parsley and mix; use a bit of pasta water if necessary to get everything evenly coated.
