Ingredients:

  • 5 tomatoes
  • 1 small onion
  • 3 cloves garlic
  • 10 dried chiles
  • 1/2 t chili powder
  • salt, pepper, olive oil

Dice the onion, mince the garlic, and shred the chiles.

Halve the tomatoes, apply olive oil, salt, and pepper, and roast at 400F for 20 minutes.

Heat some more olive oil in a saucepan, then add the chiles and cook until fragrant. Add the onions and cook until soft, add the chilies and cook until fragrant.

Skin the roasted tomatoes and add then to the aromatics. Smush everything with a wooden spoon and cook until reduced to the desired consistency, then blend.

This makes enough for 12-16 oz of pasta. It could be more tomato-ey; might need more tomatoes or longer, lower roasting (or both). Fresh chiles would also be worth a try.
