From The Elements of Pizza

  • 350g water (90-95F)
  • 13g salt
  • 1.5g instant yeast (3/8 tsp)
  • 500g flour

Mix all ingredients and let rest for 20m.

Knead and let rise, covered in an oiled container, for 2 hours.

Divide into two and shape into balls. Let rise in the refrigerator for 1-2 days.
