From The Elements of Pizza
- 350g water (90-95F)
- 13g salt
- 1.5g instant yeast (3/8 tsp)
- 500g flour
Mix all ingredients and let rest for 20m.
Knead and let rise, covered in an oiled container, for 2 hours.
Divide into three and shape into balls. Let rise in the refrigerator for 1-2 days.
