* 1 Tbsp oil&lt;br /&gt;
* 1 onion, chopped&lt;br /&gt;
* 2 carrots, thinly sliced&lt;br /&gt;
* 2 yukon gold potatoes, cubed&lt;br /&gt;
* 1/2 head cabbage, chopped&lt;br /&gt;
* 1/2 t ginger, minced&lt;br /&gt;
* 2 cloves garlic, minced&lt;br /&gt;
* 2 tsp berbere&lt;br /&gt;
* 1 tsp salt&lt;br /&gt;
&lt;br /&gt;
Head the oil in a dutch oven over medium heat.  Cook the onions and carrots until they start to soften, then add the ginger, garlic, and berbere and cook until fragrant.  Add the cabbage, potatoes, and salt, cover, and cook over medium-low until the potatoes are tender, ~25 minutes.  Season to taste and serve with [[Injera]].&lt;br /&gt;
